It's been a crazy weekend of nonstop rain, thankfully not much flooding in the upstate! Praying for those in the midlands/low country where the waters are pretty high. With such gross weather I was in a serious mood for some cozy comfort food. It's my goal to start trying new recipes so I headed to Pinterest to find something new.
Here is the link to THE best chicken and wild rice soup recipe that I've ever tried. Honestly it was super easy to make, a little messy, and took about 3 different pots. I'd recommend making this on the weekend and then take leftovers to work.
Here's the original recipe from Macaroni & Cheesecake. Below is the same recipe with a couple tweaks.
Ingredients:
1 stick of butter
1/2 sweet onion (chopped really small)
1/2 cup carrots (chopped really small)
32 oz. organic chicken broth
2 cups water
2 chicken breast (I boiled mine then shredded)
1 box of Uncle Ben long grain & wild rice (it comes with seasoning)
1/2 cup flour
2 cups of milk
salt & pepper to taste
Directions:
In a large stew pot melt 1 1/2 tbsp. butter over medium heat. Add onion & carrots and saute for 10 minutes. Add in chicken broth and chicken. Once everything is boiling add in the rice.
In a small pot melt the remaining stick of butter over medium heat. Once melted add in the seasoning packet that came with the rice. Once the mixture is bubbling slowing add in the flour stirring constantly. Next stir in the milk until the mixture is smooth. Cook the mixture for 5 minutes.
Finally combine the milk/seasoning mixture with the chicken & rice. Cook for 20 minutes or until it has thickened to desired consistency.
Serve with grilled cheese and enjoy!
