Cozy Fall Recipe: Chicken & Wild Rice

Good Morning Y'all!

It's been a crazy weekend of nonstop rain, thankfully not much flooding in the upstate! Praying for those in the midlands/low country where the waters are pretty high. With such gross weather I was in a serious mood for some cozy comfort food. It's my goal to start trying new recipes so I headed to Pinterest to find something new. 

Here is the link to THE best chicken and wild rice soup recipe that I've ever tried. Honestly it was super easy to make, a little messy, and took about 3 different pots. I'd recommend making this on the weekend and then take leftovers to work. 

Here's the original recipe from Macaroni & Cheesecake. Below is the same recipe with a couple tweaks.

Ingredients:
1 stick of butter
1/2 sweet onion (chopped really small)
1/2 cup carrots (chopped really small)
32 oz. organic chicken broth 
2 cups water
2 chicken breast (I boiled mine then shredded)
1 box of Uncle Ben long grain & wild rice (it comes with seasoning)
1/2 cup flour
2 cups of milk
salt & pepper to taste

Directions:
In a large stew pot melt 1 1/2 tbsp. butter over medium heat. Add onion & carrots and saute for 10 minutes. Add in chicken broth and chicken. Once everything is boiling add in the rice.

In a small pot melt the remaining stick of butter over medium heat. Once melted add in the seasoning packet that came with the rice. Once the mixture is bubbling slowing add in the flour stirring constantly. Next stir in the milk until the mixture is smooth. Cook the mixture for 5 minutes. 

Finally combine the milk/seasoning mixture with the chicken & rice. Cook for 20 minutes or until it has thickened to desired consistency.

Serve with grilled cheese and enjoy!

Tassels on the Beach

Tassels seem to be EVERYWHERE right now and I wasn't quite sure I could pull them off. Some of the pom pom and brightly colored tassels just weren't right. I snagged this awesome Mud Pie tunic during their summer sale a couple weeks ago and I've been itching to wear it. This was our second day on the beach and I may or may not have been a little pink, this gave me great coverage in the sun!




You're not going to believe that this tunic is under $20 right now!

Living the Island Life

About two weeks ago Thomas and I went to the beach. I've gone to Kiawah Island since I was a little girl and it is just wonderful. We did an extended weekend and it was just the relaxing break I needed from work. My sweet mom (& photographer) bought me these new Lilly Pulitzer shorts and they were just perfect to wear to dinner. I had to have the long sleeve popover since I'm always cold in restaurants. Best part about these shorts besides the neon colors is the scalloped pockets!!

We All Scream for Ice Cream!


This might have been the last unopened wedding gift that we received over a year ago, time sure does fly when you're having fun! I don't know what put me in the mood to try it out but I decided it would be great to make our own ice cream plus I can make it dairy free this way (total bonus for me). My top two favorite ice cream flavors are chocolate and mint chocolate chip. Those seemed kinda daunting for my first run at this so I decided on plain 'old vanilla. 

I found this super easy recipe at Deep South Dish

Vanilla Ice Cream Ice Cream
From the Kitchen of Deep South Dish

1 cup of ice cold whole milk
3/4 cup of granulated sugar
2 cups of ice cold heavy cream
1 teaspoon of pure vanilla extract

Just mix all the igrediants together and pour into the mixer. 25 minutes later you have ICE CREAM!

A couple things to note: The ice cream is more like soft serve but you can put it in the freezer to harden it. Next the bowl of the maker has to be frozen for 6-22 hours so you can't just pull it out of the box and start. Lastly the recipe above tastes very good but I think it had a whipped cream flavor so if you don't like that you might want to try something else. 


I can't wait to try more flavors, it's such a fun kitchen gadget. I immediately started thinking of how fun it would be to serve homemade ice cream to family and friends!
